Chill is Cirque Coffee Roasters' love letter to relaxed mornings and unhurried afternoons. This rotating single-origin series is sourced and roasted to bring out the gentler, more contemplative side of specialty coffee—balanced, clean, and remarkably easy to love. The current offering hails from Finca Monte de Oro in Guatemala's Acatenango Valley, a farm that's been part of Cirque's sourcing tradition since day one. The Melendez family, who own and operate Monte de Oro, have contributed coffees to Cirque's flagship Weirdo blend from the very beginning, and this washed Marcaturra lot was hand-selected at the cupping table in Guatemala specifically for its ability to live up to the Chill name in all the best ways.
Tasting Notes
Expect delicate apple and raisin sweetness wrapped in smooth milk chocolate. The body is medium and silky, with a balanced acidity that never intrudes—just gently lifts the fruit notes and carries them through a clean, lingering finish. This is a coffee that doesn't demand your attention; it rewards it. The washed process highlights the clarity of the terroir, allowing the high-altitude Acatenango character to shine without interference.
Brew Methods
Chill performs beautifully across the board, but it truly shines in methods that honor its delicate balance. Pour over (V60, Kalita Wave) brings out the apple brightness and chocolate sweetness in equal measure. Drip coffee makers deliver a clean, consistent cup that's perfect for daily drinking. French press adds a touch more body while maintaining that easygoing character. While it's roasted primarily for filter methods, adventurous espresso drinkers will find a mellow, chocolatey shot that works wonderfully in milk drinks.
