Fresh Perspective - Ethiopia
Fresh Perspective is Greater Goods Roasting's signature Ethiopian coffee—the one that put them on Whole Foods shelves and keeps landing in "best of" lists. Sourced from the Bishan Dimo washing station in Guji's Shakiso region, this natural-process coffee comes from 800+ smallholder families farming heirloom varieties at elevations between 1850 and 2050 meters. Producer Faysel Yonis and his brother Hakime manage the station with meticulous care, drying whole cherries on raised beds for 15-18 days under the Ethiopian sun. The result is a coffee that tastes unmistakably like fruit—strawberry candy, blueberry muffin, and creamed honey dominate the cup.
Tasting Notes
This is the coffee that makes people ask, "Wait, is there flavoring in this?" There isn't—just exceptional terroir and processing. The natural method amplifies Fresh Perspective's wild berry character: bright strawberry on the front, baked blueberry in the middle, and a creamy honey sweetness that lingers through the finish. The body is syrupy and mouth-coating, balanced by a vibrant acidity that keeps each sip lively rather than cloying. The chocolatey undertones emerge as the cup cools, adding depth to the fruit-forward profile. Light to medium roast development preserves the delicate heirloom characteristics while building enough body for versatility across brew methods.
Brew Methods
Fresh Perspective shines brightest as espresso, where its syrupy body and fruit intensity create a memorable shot that needs no milk (though it makes a stunning cappuccino if you're inclined). The berry notes concentrate beautifully under pressure. Pour-over methods like V60 or Chemex highlight the strawberry-blueberry clarity, especially when brewed at lower temperatures (195-200°F) to tame the brightness. French press brings out the creamed honey sweetness and builds an even thicker body. Avoid over-extraction—this coffee's natural sugars can turn bitter if you push it too hard. Start with a medium grind and adjust from there.
