Alma Coffee's Honey Process is a testament to what happens when fifth-generation coffee farmers push beyond tradition. Grown at Finca La Unica in Honduras—a farm transformed from cattle pasture into a meticulously maintained coffee estate—this honey-processed lot showcases the bright, complex character that high-altitude terroir and experimental processing can achieve. Leticia, co-owner of Alma and steward of La Unica, worked closely with agronomists and the Honduran Coffee Institute to perfect a honey process that balances fruit-forward sweetness with clean, tea-like clarity.

Tasting Notes

Expect a juicy, almost syrupy body with layers of stone fruit, honey, and floral undertones. The honey process—where beans are dried with some of the fruit mucilage intact—imparts a natural sweetness and viscosity that's less funky than a full natural but more complex than a washed coffee. The acidity is bright but gentle, like white peach or apricot, and the finish lingers with brown sugar and a hint of jasmine. This is a coffee that rewards curiosity: each sip reveals something new.

Brew Methods

Honey-processed coffees shine in methods that highlight clarity and sweetness. Pour over (V60, Chemex) brings out the tea-like body and fruit nuances. Immersion methods like French press or AeroPress amplify the syrupy texture and honeyed finish. As espresso, it's unconventional but extraordinary—pull a ristretto to concentrate the stone fruit and caramel notes. Because Alma leans toward a light roast to honor the terroir, grind slightly finer than you would for a darker roast and adjust your water temperature to 200–203°F for optimal extraction.
