Grown at elevations between 1,900 and 2,200 meters above sea level, these heirloom varieties thrive in Agaro's high-altitude, rain-rich environment and sandy soils.

The Kolla Bolcha washing station in Kimbibit takes meticulous care with every cherry. After depulping with Penagos machines, the beans are soaked overnight to remove residual sugars, then dried slowly on raised beds for 6–8 hours daily over the course of a week.
