Here, whole coffee cherries dry intact under the Central American sun, absorbing the fruit's sugars and developing flavors that read more like a fruit bowl than a traditional cup. Expect juicy brightness, tea-like body, and notes that shift with each sip—stone fruit, berry, sometimes even tropical funk. This is what happens when a family farm perfects a process over years of trial, consultation with agronomists, and obsessive attention to detail.

Tasting Notes

Juicy and vibrant, with pronounced fruit-forward sweetness. You'll find strawberry, peach, and sometimes a hint of blueberry or tropical fruit, depending on the harvest year. The body is lighter and more tea-like than washed coffees, with a silky mouthfeel and a clean, lingering finish. Acidity is bright but balanced—think fresh fruit, not citrus punch.
