Unwind Decaf
Unwind Decaf from Methodical Coffee proves that giving up caffeine doesn't mean sacrificing flavor. Sourced from the Sierra Productora de Café Amatenango de la Frontera Cooperative in Chiapas, México, this coffee maintains robust character and pleasant sweetness through a careful Ethyl Acetate decaffeination process that preserves the bean's essential qualities.
The cooperative behind Unwind faces unique challenges—SIPRO and Amatenango work in a region where extreme security risks complicate coffee mobility, yet their commitment to quality remains unwavering. Their washed processing includes 12-24 hour fermentation periods, with some lots extending to 84 hours for developed complexity.
Tasting Notes
Expect a balanced cup with mellow sweetness as the defining characteristic. The body remains full and round despite decaffeination, with subtle cocoa undertones and a clean finish. The acidity is soft and approachable, making this an easy-drinking coffee at any hour. The Ethyl Acetate process—using sugar cane-derived solvents—removes caffeine without stripping away the bean's inherent sweetness or mouthfeel.
The EA Decaf Process
Methodical selected the Ethyl Acetate method for its gentle extraction. Green coffee soaks in a water and EA solution, where the solvent bonds specifically to caffeine molecules. After extraction, the beans are steamed to remove any residual EA, leaving clean, decaffeinated coffee ready for roasting. Because EA derives from fermented sugar cane molasses rather than synthetic sources, it's often called the "natural" decaf process.
Brew Methods
Unwind shines across methods. For drip and pour over, its balanced profile delivers consistent cups without the flatness some decafs exhibit. In espresso, it pulls shots with surprising body and crema, making excellent milk drinks for evening cappuccinos. French press brings out the chocolate notes and fuller mouthfeel. Cold brew enthusiasts will appreciate how the sweetness concentrates without bitterness.
